Cultured Butter Homemade

Making your own cultured (fermented) butter from raw cream is really quite easy.  It is another way to get probiotics into your meals and ultimately into you.  Also having the added benefit of the buttermilk that separates from the butter for a wonderful tasting and refreshing drink.

Twenty years ago, or more, when I first starting making my own fresh raw butter I didn’t  know about culturing the milk first and I also poured the liquid buttermilk down the sink.   I didn’t realize at the time that this was good to drink. (buttermilk pancakes or buttermilk biscuits anyone?)  Interesting how we evolve over time and learn new ways of doing things.

They didn’t culture the milk first but the rest of the process is the same.
 

The recipe. Only one ingredient and maybe best to start with a quart of cream the first time. Makes 1/2 pound butter and 2 cups buttermilk.

Homemade Cultured Butter & Buttermilk

1 quart raw cream
 
in a glass bowl or jar cover with a lid and let sit on the counter for at least 8 hours until the cream starts to sour
first time let sour just a little
when sour to your taste
 
put into a food processor
fill only about 1/3 full
may have to do this in batches
 
mix until butter separates from milky part
very quick with a food processor, few minutes
you will see clumps of butter and milk together
dump all this into a strainer that is over a bowl
to catch the buttermilk
 
continue with another batch if you have more left
put butter into a medium-sized bowl
add other batches to bowl
 
pour buttermilk into a glass container and refrigerate
with a wooden spoon or paddle spread the butter along
side of bowl so liquid runs out
 
save all this liquid and add to that in the refrigerator
when no more liquid runs out of the butter it’s ready
 
you can add a little sea salt if you prefer and mix it in
put in a container
keep cold or on the counter
 
drink the milk, it tastes like milk not like the buttermilk
from the store
