A Good For You Alternative To A Mounds Candy Bar…
Mounds candy bars were by far my favorite candy. I could and have bought the pack of ten small bars and eaten them all the same day. Any thing with coconut in it I love.
I don’t love nor eat (anymore) most of the ingredients in a Mounds, like corn syrup, soy lecithin, PGPR (what is that) natural and artificial flavor((what are they) natural flavor is another way to add MSG) sodium metabisulfite, sulfur dioxide and caramel color (what is this made of).
Coconut Delites1 can coconut milk 13.5 oz 3 cups dried shredded unsweetened coconut – 2 cups and 1 cup 1/4 cup canned coconut sugar 1/4 teaspoon liquid stevia dash sea salt 2 – 10.5 0z. bags of Enjoy Life semi-sweet chocolate* 1 to 2 tablespoons coconut oil Empty coconut milk in a large sauce pan. Heat till it comes to a boil. Add salt, coconut sugar and stevia, stir . Add the 2 cups of dried coconut and stir, cover pan with lid. Reduce heat to lowest setting and cook mixing every 10 minutes or so for one hour. Remove from heat and stir in the one cup of coconut, mix well and let cool, then refrigerate until cold. Take rounded tablespoon full of coconut and form into a log or bar. Place on wax-paper covered cookie sheet and again refrigerate until cold or freeze for 30 minutes. Melt chocolate add one tablespoon coconut oil to thin the chocolate, dip ends and bottom of logs or bars. Refrigerate until set. Then dip tops and sides. Add the other tablespoon of coconut oil if needed. Keep refrigerated.
*I use Enjoy Life chocolate because of the ingredient list: evaporated cane juice, natural chocolate liquor (non-alcoholic), non-dairy cocoa butter. That is it, no extra anything and the chocolate tastes great! Everyone who eats these, comments on the great tasting chocolate.
