Cinnamon Nut Balls

For a change of pace and because I promised myself to publish at least one healthy, great tasting recipe each week here is an energy packed treat.  These are guaranteed to keep your energy levels high.

Cinnamon Nut Balls,  approx. count 50 to 60

2 cups almonds – dry unsoaked
1 cup coconut sugar
1/2 cup cocoa
1/2 cup hemp seeds
1/4 cup goji berries
1/4 cup chia seeds – dry
1 tsp vanilla

1/4 cup water about (may use)
1 cup whole almonds for center of balls
1/2 cup cinnamon to roll the balls in

Put all ingredients except the water,  the whole almonds for the center and cinnamon into a food processor.
Chop the ingredients together until mostly small pieces.
Slowly add enough water to hold everything together but not too sticky.
Take a tsp (or so) of dough and put an almond in the middle with your finger tips,
form a ball around the almond. Drop the ball into the cinnamon and roll it around until it is covered.
Roll the ball in the palms of your hands until round and smooth.If the dough is to sticky and it’s too hard for you to make balls around the almonds, put the dough (uncovered) in the refrigerator for an hour or so.
Enjoy, these are great to eat and will give you energy for the afternoon or evening.

Keep refrigerated, take out an hour or so (to soften) before eating if desired.
